I would be remiss if I didn’t blast out this recipe that I make and love as a perfect side dish. Clean. Healthy. Full of flavor and freezes perfectly.
Admittedly, I am not a kitchen person. I don’t generally post much about food. Its a necessity and not my passion. But this recipe works
magic. Quinoa, Feta Cheese, Cilantro, Black Beans and corn are the healthy and scrumptious base. I added red kidney beans for a little more color and red pepper flakes instead of cayenne pepper for a little more kick 🙂
Then, HE got a really good idea to scoop it onto avocado and made it even more delectable.
The recipe makes enough for me to set it aside in containers and simply thaw for a chilled side dish. It has become a staple item.
Perfect.
